I know, I know, I haven't posted in over a month. I've been busy. Work, the gym, socializing, and all sorts of other things took over my time. I have been cooking though and have a huge backlog of recipes as a result. I guess it's nice to know that I could eat out for the next month and still have plenty of food pictures to post but I do feel guilty that a lot of these are seasonal recipes and some people might not want to pay a premium for seasonal fruits.
I'll admit, I didn't always like peaches. I'm sure my mom would be more than willing to tell anyone who asks about my unreasonable dislike for peach jam. Fortunately I have mended my ways and now embrace peach as one of the best parts of early fall.
Since I've been trying to lose weight and get in shape, it's been a challenge to make some of my favorite fall treats. Fortunately most of them are easily adapted to the ramekin. This recipe is pretty straight forward, so there's not much to say about it. I promise it's worth buying peaches now that they're a little out of season!
