This is one of those recipes that almost everyone has their own version of. I'd like to say that mine is the best, but I don't know if it is; especially since I change the way I make it every time. Some days I add some cheese, others it's some cumin, and still other it's some extra onion or a more spicy salsa. But the recipe above is a basic format that you can start with before you experiment according to your own tastes.
I personally like to use a sweet salsa and add spiciness according to my taste by sometimes adding chili peppers or chili powder, but you can use whatever you want.
Adding a sprinkle of Colby-Jack cheese can really bring the dish together if you're tired of being 100% healthy and want some cheese. (Cheese is my weakness and I eat it as a dessert a lot.)
Even if you do use that cheese you're still looking at less than 200 calories for your main course which frees you up to have some brown rice along with whatever veggie you choose.
