As much as I love chicken dishes, I love them even more when cheese is involved.
Muenster cheese is the element of this dish that really ties it together. Yeah, sprinkling a little bit of chili powder, bacon bits, or parsley on top of the cheese can make it look super classy, but the cheese is what completes the flavor profile and gives it that initial appearance of refinement that the garnish ties together.
If you're not familiar with muenster cheese you should start using it. It's one of my favorite cheeses, it melts well, has a mild to sharp taste, and is lower in fat than most other cheeses. It works really well to tie a lot of dishes together or just be a good low-fat snack if you crave dairy as much as I do.
The greatest part of this recipe, is even if you use the mayo and bacon bits, it's only 220 calories. That's pretty darn low for such a tasty dish. Once you throw in a little brown rice and some green beans you're still sitting at or below 300 calories for a meal that I typically can't finish.
