Remember how I said I was going to post a lot of recipes made for the ramekin? Well, this is the second one and there are going to be a lot more because ramekins are awesome. They’re built in portion control. I have no self-control when it comes to tasty food and appropriate portions—AKA the real reason I do meal prep at the start of the week.—so ramekins are the perfect baking dish for me.
The best thing about cobblers is that they’re really easy to make and you can mix and match pretty much any kind of fruit. Want mixed berry cobbler? Throw in some black berries and/or blue berries. Want apple or peach cobbler? Just swap out the berries for those. They also are a way to get pie filling and tasty sugar bread products without having to go to the effort of making a pie crust look pretty.
When it comes down to it, cobblers are really similar to pies; the main difference is the lack of a pie crust which is by far the hardest part of the pie to get right.
