I'll admit. I haven't been the best at cooking my own food or at eating healthy food lately. A combination of work travel, parties, and assorted social events have had me eating out way more than I should. As much as I love eating barbecue, burgers, or steak for every meal, it's not exactly the best way to continue to get in shape and it certainly isn't very frugal.
After browsing Pinterest for some ideas I realized that stir fry was the perfect option. It was something I hadn't had in awhile, rarely make, and tends to be extremely healthy if you make it right.
So, I did a lot of research on different types of stir fry. Saw some ideas and approaches I liked, and then build a recipe around the ones I liked and added my own ideas to make sure that it fit my own needs and tastes. I wasn't about to ruin stir fry by putting broccoli in it. Yes, I know that broccoli is healthy, I know that it's childish to hate it. But I really, really dislike broccoli.
The end result is the recipe above. It melds traditional stir fry flavors with some of my favorite flavors. The best part? It's only around 300 calories a serving if you serve it with a half cup of brown rice.
